Define the Role Clearly
Before you start hiring, know exactly what you need. Are you hiring a Commis, Chef de Partie, Sous Chef, or Executive Chef? Each role has different responsibilities, skill requirements, and salary expectations. Write a detailed job description including: the section they'll manage (hot kitchen, bakery, cold kitchen), cuisine style (Indian, continental, bakery), team size they'll supervise, and reporting structure. The clearer your requirements, the better candidates you'll attract.
Where to Find Chef Talent
1) Post on HotelJobsIn.com — the platform is purpose-built for hospitality hiring in India. 2) Contact IHM campuses for fresh graduates and management trainees. 3) Ask for referrals from your existing kitchen team. 4) Attend hotel management job fairs and culinary competitions. 5) Post on LinkedIn with relevant hashtags. For senior roles, specialised hospitality recruiters can help, but they charge 8–12% of annual salary.
Screening & Shortlisting
When reviewing CVs, look for: relevant experience in similar property types (five-star, QSR, fine dining), stability (not changing jobs every 6 months), specific cuisine expertise matching your needs, and certifications (food safety, culinary diplomas). Red flags: unexplained gaps, frequent job changes without career progression, and vague role descriptions. Phone-screen shortlisted candidates to assess communication skills and salary expectations before the in-person interview.
The Practical Trial
For chef roles, a practical trial is essential. Ask shortlisted candidates to prepare 2–3 dishes from your menu within a time limit. Assess: knife skills, hygiene practices, kitchen organisation, time management, and the final dish quality. A trial reveals more than any interview question. Provide a standard set of ingredients and let them demonstrate their technique. For senior roles, also assess their ability to lead and instruct others during the trial.
Making the Offer
Once you've found the right candidate, move quickly — good chefs are in high demand. Prepare a written offer including: salary (monthly and annual CTC), joining bonus if applicable, duty meals and accommodation if provided, leave policy, working hours and weekly off, and probation period. Be transparent about expectations and growth opportunities. A well-structured offer with clear terms builds trust from day one.
